Over the last couple of years, we’ve made it a tradition to write a quick note as the year wraps up. Every time we sit down to write this letter, we are overwhelmed with gratitude and appreciation for you—our customers, friends, and family. This year is no different.
As you may know, in September 2023, we laid Bud Paul to rest on the farm. It was unexpected and difficult, making the next 12 months a particularly trying time for all of us. Bud was a big part of all our lives—a 4th-generation family member and the heart and soul of the farm, alongside his brother, Tim.
Bud embodied everything we strive to be as a family: hardworking, honest, and caring, a little rough around the edges at times. As we took time to grieve and adjust, we made changes and adapted on the farm.
In September 2024, we held a cookout on the farm and brought together many friends and family to eat, laugh, and enjoy life in Paul Hollow. This event kicked off the last four months of 2024, which have been absolutely wonderful.
With your support—our friends, families, and communities—we have achieved so much this year. We hired two new employees, attended a 24-day Christmas market in Greenville, SC, shipped syrup all over the country, and shared the farm with so many new and old friends.
As we close out 2024, all we can say is thank you. Thank you for your love, grace, patience, and support. We know we’ve had a few hiccups along the way—orders that weren’t quite right, shipments that were too much or too little, and some forecasting misses. But we’ve learned and grown, and now we’re ready for 2025—our 160th year on the farm.
So, mark your calendars for Labor Day weekend! We’re starting a new tradition on the farm. We’ll share more details as we get closer, but plan on coming together to eat, drink, and celebrate life here at Paul Hollow.
To close this letter and this year, we’ll leave you with the words of Bud Paul: “Damn it, that’s enough. Let’s get back to work; we’re burning daylight.”

The Pauls
In 1865, William Paul homesteaded in what became and now is Paul Hollow. Over the last 150 years, the Paul's have lived and partnered with the land. Today when you come up the dirt road, you'll find the 4th generation on the farm, Bim, Judy, Bud and Debby, Tim and Cathie, along with 5th and 6th generation family and of course, our dear friends of the farm.
Today we focus on producing small batch wood-fired PA Maple Syrup and Raw Goldenrod Honey. We love bringing our farm to your table.
